Genuine Roquefort is aged in the caves under the Combalou mountain. Here, cool winds flow through rock crevices and provide optimal conditions as humidity is high and temperature low all year round. The unpasteurised sheep's milk provides a unique and refined taste experience. The flavour is clean and salty, which goes well with the sweetness of the milk. The curd is moist and crumbly and melts in your mouth.
